From 15 August to 15 September 2024, Xin Cuisine Chinese Restaurant welcomes you to indulge in an extraordinary feast of Crocodile Gastronomy.


Under the guidance of Xin Cuisine’s Chinese Executive Chef, Kwan Yiu Kan, the menu features exquisitely curated crocodile dishes. Chef Kwan was inspired by the nutritional benefits of crocodile meat and recognized the scarcity of this unique delicacy in Singapore. As a crocodile meat lover and an advocator of healthy eating, he has skillfully incorporated various parts of the crocodile into diverse culinary styles, offering diners a wholesome and unforgettable gastronomic experience.

 

Indulge in the rich fragrance and flavours of Xin’s hearty Double-boiled Crocodile with Loquat Soup 药膳川贝鳄鱼骨汤 ($38 per person). This dish boasts a deep umami taste, achieved through double-boiling process of crocodile meat exquisitely infused with loquat soup, which is known to nourish the lungs and alleviate cough. 

Next up, Steamed Crocodile Paw with Sliced Mushroom and Chinese Preserved Ham 金华麒麟鳄鱼掌 ($88 per portion*) is not to be missed. This combination creates a nuanced balance of flavours that excites your
palate. Featuring crocodile paw steamed to perfection to give you an invigorating taste, atop sliced mushrooms with Chinese preserved ham, this dish offers a silky and rich aftertaste that lingers.

If you are a spice lover, our Braised Crocodile Skin in Chef’s Spicy Sauce 川辣鳄鱼皮 ($38 per portion*) is just the pick for you! An adventurous dish that combines tender, succulent crocodile skin with aromatic spicy mala sauce, it provides an additional kick. The crocodile skin is skillfully braised for 2 hours to achieve a delicate texture that complements the bold flavours of the spicy sauce.

To elevate your Crocodile Gastronomy journey, enjoy a fusion of flavours with our Braised Crocodile with Roast Pork and Beancurd 火腩豆腐焖鳄鱼肉 ($42 per portion*). It’s a rich and harmonious blend using tender crocodile tail meat paired with flavour-packed marinated roast pork. To complement these proteins, fried beancurd is added to enhance the overall harmony of the dish.
